Eggplant, Zucchini and Mushrooms Veggie Stacks

1.Preheat the oven to 350. 2.Spray cooking oil in a baking dish. 3.Put down a layer of eggplant slices. 4.Add zucchini slices on top. 5.Add roasted red pepper slices. 6.Top each stack with 1 tablespoon cream cheese. 7.Add a mushroom cap onto each stack. 8.Pour sauce over the stacks. 9.Top with cheeses. 10.Bake 25 minutes until veggies are cooked. 11.Serve warm. •1 Italian eggplant slices •1 large thick zucchini slices •1 jar roasted red peppers slices •1/2 cup cream cheese •9 large mushroom caps •1 jar Bertolli Riserva sauce •1 cup mozzarella cheese shreds •1/4 cup Parmesan cheese grated
